Use these recipes as a guideline to adapt what you have left over to nutritious homemade meals in jars.<\/p>\n<h2>Canning Turkey<\/h2>\n<p>After a few meals of roast turkey, remove most of the meat from the bones and place it in the refrigerator. \u00a0You&#8217;ll be left with a rather desolate-looking carcass.  Put that in your crockpot along with the reserved neck and giblets (if you didn&#8217;t use those for gravy). \u00a0Add some veggies from the holiday snack tray &#8211; carrots, peppers and celery are great additions! \u00a0Add a couple of tablespoons of salt, a head of garlic and 4-6 onions. \u00a0Note: \u00a0there&#8217;s no need to peel the garlic and onions as long as they are organic &#8211; just wash them well. \u00a0Fill the crockpot with water and add your favorite spices (not sage &#8211; it tastes terrible when canned). \u00a0I used whole peppercorns, salt, oregano and bay leaves.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"\" src=\"http:\/\/i1061.photobucket.com\/albums\/t472\/shotofespresso\/turkey%20soup\/DSCF8610.jpg?t=1356555728\" width=\"420\" height=\"315\" \/><\/p>\n<p>Put the crockpot on low for 12-14 hours and let it simmer undisturbed overnight. \u00a0Zzzzzz&#8230;&#8230;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"DSCF8612\" src=\"http:\/\/i1061.photobucket.com\/albums\/t472\/shotofespresso\/turkey%20soup\/DSCF8612.jpg?t=1356556906\" width=\"438\" height=\"206\" \/><\/p>\n<p>The next day, strain the contents of the crockpot into a large container &#8211; I use a big soup pot and a metal colander. \u00a0After allowing the bones to cool remove any meat that you would like to add to your soup. \u00a0I always give our dog a big treat &#8211; a bowl of turkey with gristle, fat and skin. \u00a0(She&#8217;s a little on the skinny side because she runs constantly when she&#8217;s outside so I think that the occasional fat intake is good for her.) \u00a0She also likes the mushy carrots.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"\" src=\"http:\/\/i1061.photobucket.com\/albums\/t472\/shotofespresso\/turkey%20soup\/DSCF8616.jpg\" width=\"298\" height=\"368\" \/><\/p>\n<p>Take all of the meat that you put in the refrigerator the night before and cut it into bite-sized pieces. \u00a0I like a mixture of light meat and dark meat for this purpose. \u00a0Also cut up the meat you removed from the crockpot.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"\" src=\"http:\/\/i1061.photobucket.com\/albums\/t472\/shotofespresso\/turkey%20soup\/DSCF8618.jpg\" width=\"368\" height=\"292\" \/><\/p>\n<p>Place approximately 1 cup of turkey in each of your<a href=\"http:\/\/www.theorganicprepper.ca\/canning-101-jar-prep-12152012\" >\u00a0sanitized jars<\/a>. \u00a0(I ended up with about a cup and a half in each jar.) Add 1-2 cloves of garlic to the jars.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"\" src=\"http:\/\/i1061.photobucket.com\/albums\/t472\/shotofespresso\/turkey%20soup\/DSCF8621.jpg\" width=\"368\" height=\"277\" \/><\/p>\n<p>You will have a rich, dark beautiful stock from the overnight crockpot project. \u00a0Ladle this into the jars over your cut-up turkey and garlic. \u00a0Leave 1 inch of headspace at the top of the jars. \u00a0If you run out of broth, top it up with water &#8211; don&#8217;t worry &#8211; your broth will still be very flavorful.<\/p>\n<p style=\"text-align: center;\">\u00a0<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"\" src=\"http:\/\/i1061.photobucket.com\/albums\/t472\/shotofespresso\/turkey%20soup\/DSCF8620.jpg\" width=\"368\" height=\"277\" \/><\/p>\n<p>Wipe the lip of your jars with a cloth dipped in white vinegar. \u00a0Place the lids on and process them in your<a href=\"http:\/\/www.theorganicprepper.ca\/canning-101-pressure-canning-12152012\" >\u00a0pressure canner<\/a>\u00a0for 90 minutes at 10 pounds of pressure,<a href=\"http:\/\/www.theorganicprepper.ca\/canning-101-altitude-adjustment-12152012\" >\u00a0adjusting for altitude<\/a>.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"DSCF7303\" src=\"http:\/\/i1061.photobucket.com\/albums\/t472\/shotofespresso\/cans\/soups\/DSCF7303.jpg?t=1344712459\" width=\"277\" height=\"244\" \/><\/p>\n<p>Your result will be a deep golden, rich meaty soup. \u00a0This is an excellent base for turkey and dumplings, as well as any type of turkey soup.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.theorganicprepper.ca\/wp-content\/uploads\/2012\/12\/turkey-soup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"turkey soup\" alt=\"\" src=\"http:\/\/www.theorganicprepper.ca\/wp-content\/uploads\/2012\/12\/turkey-soup-300x221.jpg\" width=\"300\" height=\"221\" \/><\/a><\/p>\n<h2>Canning cranberry sauce<\/h2>\n<p>If you have leftover cranberry sauce, you may can it for future use. I like to use teeny little half pint jam jars for this.<\/p>\n<ol>\n<li>Heat the cranberry sauce to a simmer on the stovetop.<\/li>\n<li>Ladle the sauce into <a href=\"http:\/\/www.theorganicprepper.ca\/canning-101-jar-prep-12152012\" >sanitized jars<\/a>, leaving 1\/4 inch of headspace.<\/li>\n<li>Wipe the rims of the jars, then place the lid on them.<\/li>\n<li><a href=\"http:\/\/www.theorganicprepper.ca\/canning-101-water-bath-canning-12152012\" >Process in a waterbath<\/a> canner for 15 minutes, <a href=\"http:\/\/www.theorganicprepper.ca\/adjusting%20for%20altitude\" >adjusting for altitude.<\/a><\/li>\n<\/ol>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.theorganicprepper.ca\/wp-content\/uploads\/2013\/11\/cranberry-sauce.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2635 aligncenter\" alt=\"cranberry sauce\" src=\"http:\/\/www.theorganicprepper.ca\/wp-content\/uploads\/2013\/11\/cranberry-sauce-300x247.jpg\" width=\"300\" height=\"247\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h2>Thanksgiving Soup<\/h2>\n<p>Round up whatever veggies that you have left over from Thanksgiving. \u00a0Don&#8217;t worry if they have some butter and seasonings on them &#8211; it will all add to the rich flavor of your soup.<\/p>\n<p>My soup contains carrots that were cooked in honey, green beans with some butter, some diced sweet potatoes, and corn with butter. \u00a0Use whatever you have. \u00a0Don&#8217;t be shy about raiding your veggie tray either &#8211; chop your crudites into bite sized pieces and add them raw to your jars &#8211; they&#8217;ll cook beautifully during the canning process.<\/p>\n<ol>\n<li>Add one cup of your vegetable mixture to each <a href=\"http:\/\/www.theorganicprepper.ca\/canning-101-jar-prep-12152012\" >sanitized quart jar<\/a>. \u00a0If you want, throw in some peas and diced potatoes too.<\/li>\n<li>Add 1 cup of chopped turkey to each jar.<\/li>\n<li>Season with a clove of garlic and 1-2 tablespoons of chopped onion in each jar.
